Exact steps for others to reproduce the error
Not sure if it's in my file only, but it's not a file I can share publicly, so if a developer wants to take a look, let me know and I can send it to you (It's a 70mb .FBX with 1.4 million polygons in it, imported from CAD data into Max and then exported from there).

Try to hide all faces except the ones you want to make the cut, select the faces you want and then with SHIFT+H you will hide everything else, and then try to make the cut.

Hm, there is T65585: Knife Tool fail if camera is too close to the object and mouse away from object and T62285: Knife Tool produces bad geometry in certain cases (disconnected edges/vertices, overlapping faces) already, but in order to reproduce, we would really need an example .blend file.
(looks like it could be a duplicate of T65585, really)

Do you have an example you can share?
Does this happen on other zoom levels as well?
Does this also happen on a [reduced, sharable] subset of that geometry?

@Ricardo (INeedMana) this workaround made the knife tool behave as normal again, thank you!

@Philipp Oeser (lichtwerk) It does not happen on any reduced version of the file, so I think you may be correct in your suspicion that it is probably a duplicate of T65585.
