Short description of error
For some reason its snapping to the origin of the object if go a few pixels over the edge.

Exact steps for others to reproduce the error

Try cutting using kife (k) from the marked vertex to the edge and move the mouse a little bit over the edge, (chek the gif in the description)

I can't confirm this exact behavior, but as soon as I get past second edge, I will get very wild trajectory.

This seems to hapen because there are 2 meshes in one object and one of meshes is partially off screen.

This looks like a duplicate of T65585: Knife Tool fail if camera is too close to the object and mouse away from object?

I will merge these reports (feel free to comment again if it turns out to be a different issue...).
Also agree this should see some love since it is such an important tool...
