Short description of error
I would like to make a couple of suggestions to developers if there is no problem, I am new to Blender and I come from other software, there are a couple of functions that I cannot find and I deduce that Blender does not have them implemented.

Is it possible to hide the geometry in wireframe from negative normals? the normal ones in red, this would be very useful in retopology.

Another question is if it can be done (I did not find it and I did a lot of google) I need to know if in a quad you can reverse the direction of the invisible inner edge without converting that geometry into two triangles and keep the quad shape?

You can achieve the former, more or less, by enabling the Wireframe mode and disabling X-Ray. This will only display the geometry facing you, but also only the first face in the viewing direction.

Your second question would depend on whether you start with convex or concave geometry. In general you can convert to triangle first, use {key Crtl E} > Rotate Edge CW and the Face > Tris to Quads. You may have to adjust the angle parameters of the latter operator to determine whether concave or convex quads are used.
