I have an RX580 and had the same problem. The issue is with my graphics drivers. Some recent updates to them are what cause this problem. The solution for me was to downgrade my drivers, and it works fine, just like it used to.

You can find one here . I used 20.4.2.

Update: This doesn't solve every problem I was having. It solved the material thing, but I'm still getting "split kernel error: failed to load kernel_indirect_background" with Cycles. I'll update this again once I've tested more.

Update 2: I've also reverted to Blender 2.83.10 and radeon 20.2.2. Everything works fine.

Driver 20.11.1 seems to be the latest driver that works with the least number of issues.

However, if you don't want to downgrade, you can try enabling Render Properties -> Performance -> High Quality Normals as a temporary workaround. This should resolve the rendering issue, but it has a limitation of not working for all object types.
