Delete Branch "%!s(<nil>)"
Deleting a branch is permanent. Although the deleted branch may continue to exist for a short time before it actually gets removed, it CANNOT be undone in most cases. Continue?

Short description of error
Same issue as we had here #71759 (Sculpt/Vertex/Weight Paint Brush Size Gets Undone After Undoing a Stroke) and same reason to fix it or exclude from undo.
Stroke undo symmetry too.

This problem is the same as #71759, it just happens that symmetry settings are not stored in the brush, so the problem remains for non-brush settings.

Just a note we also have this for operators [not strokes]: #69760 (Undo/Adjust Last Operation: vertex and weightpaint operators/strokes undo more then they should (change back any setting changed prior to execution))

This is indeed a known issue, and more of a design issue than anything else really: Why do we store a purely runtime, editing setting in Mesh datablock?
I'd really rather NOT start not undoing some parts of pure data IDs like mesh etc. Doing that for Scene (for the 3DCursor) is already annoying...
I started storing the remesher settings in the mesh datablock back in 2.81 as they need to be associated with it. Before that, there were already other similar editing settings there, like the dyntopo state and the edit symmetry flags.
