I'm sorry, I did not realize this wasn't a bug because I couldn't reproduce this under similar circumstances in 2.79. While this is present in 2.79, it is much, much worse in 2.8. This image shows how difficult it is to get this to happen in 2.79, and unlike 2.8, going even lower with the Clip Start doesn't seem to have much of an impact:

The above video is basically identical to the experience I've had. Editing materials in some cases will randomly result in a crash eventually. I can't give another video for reference but I can describe how I've been getting the file provided to crash somewhat consistently: What I do is plug the color output of the multiply node into each input of the principled BSDF one by one until I reach the bottom, then do the same for the bump node. This will usually result in a crash by the time I'm finished. If not, I can usually get it to crash by restarting Blender and repeating. Of course, attempting to do any real work with materials will also crash Blender.

Are you sure this is not a simple fix? It seems like it is extremely likely to just be a simple mistake.

Update: This problem extends into materials. Particle hair systems with "Emit From" set to "Verts" cannot have textures in materials use the UVs of the emitter mesh. Again, they appear to just default to generated coordinates. This is the case for both Cycles and Blender Internal renderers.
