We're tracking this issue here: #94936 (GPU subdivision option with subdivision surface modifier collapses geometry (AMD GPU))
Either disable GPU subdivision from Preferences tab: {nav Edit > Preferences > Viewport > Subdivision > GPU subdivision}
or Upgrading your GPU driver will fix the issue: https://www.amd.com/en/support
