Worked: (newest version of Blender that worked as expected)

Short description of error
Geometry nodes Mesh to curve -> Set Spline Type -> ... -> Curve To Mesh works fine with SplineType:Bezier, but if you change the SplineType to NURBS Blender crashes.

Exact steps for others to reproduce the error
See attached blend file / screenshot or follow the tutorial here https://www.youtube.com/watch?v=a_uaqvREsFw up to around the 7-minute mark. At that point, if I go back to the earlier 'Set Spline Type' node and select NURBS, Blender crashes.

Hi, hanks for the report. I've not been able to repro the crash by just changing the spline type (to NURBS).
Is there anything extra I'm expected to perform to get the crash?
Could you upload crash logs:

Please open Blender's installation directory and double click on the blender_debug_gpu.cmd. This will start Blender in debug mode and create log files. Try to reproduce the
error again. Once it crashes or you close Blender manually the Windows Explorer should open and show you up to two files, a debug log and the system information. Add them
to your bug report by clicking on the upload button as shown in the screenshot below or via drag and drop. Please also upload the crash log located in C:\Users\[your username]\AppData\Local\Temp\[project name].crash.txt (or simply type %TEMP% into the path bar of the Windows Explorer).2019_12_04_upload_icon_developer_blender_org.png

geom_nodes_string_tutorial.blend

Update the scene file... Sorry my mistake. The earlier one did not have the curve mesh attached to the output of the geometry nodes. This one does.
With this file, from opening the file... doing nothing else... select NURBS for the spline type, and it crashes.

Strangely, when I repeated the blender_debug_gpu, I don't see the same ERROR in the debug_output. (Attached as well).blender_debug_output.txt

Thanks for the updated file. Crash occurs is same reported in #98917 (Regression: Curve to Mesh node crashes blender if there is a single vertice curve)
Fix has been fixed in master branch and listed for next corrective release #98661 (3.2: Potential candidates for corrective releases)
