In some cases GP objects looks blocky, like a low poly objects.

Open attached file and render it.
Compare render result with previous worked blender version.

Event Timeline

Tested on 2.83 (sub 11) hash: rBd0d20de183f1, same result.
Blockness dependent of viewport zoom.

I think this is because of the antialiasing method. I would consider this known limitation for now.
