Short description of error
If both option, (GPU/CPU) for render device in the preference option, is checked this will cause a crash for viewport renders only.
Exact steps for others to reproduce the error
Check both option, (GPU/CPU) for render device in the preference option. Try to render in viewport only.

I just edited your post so the crash log wouldn't take up 5 pages, someone who actually has a mac will have to look at this :)

I'm also experiencing this. Blender does not crash when you output a cycles render, but does crash when you change the viewport to cycles 'rendered' mode.
There's another (possibly?) related issue. If you ONLY have 'GPU' checked in system preferences (and 'Cycles' selected as the rendering device), you can render in the viewport just fine, but Blender will crash after you output a render, close the render view, then click in the viewport. So it's the opposite of the above reported issue; it'll render in the viewport, but crash after you output a Cycles render.
Should this be reported as as separate bug?

Works beautifully now! A thing of beauty!
Awesome performance and completely silent 90% of the time and just a whisper the last 10%.
Much love to all involved. Can't wait to see what performance will be like on my 2019 Mac Pro later and perhaps more importantly the new ones coming down the road.
And I want to underline how much it's appreciated, the speed with which this was addressed.
