Seth (VirtusH) closed T73868: Blocky Volumetric Shadows in Cycles as Resolved.

That was precisely the problem! I didn't realize that transparency bounces had such an effect on volumes, seeing as there's a volume bounce parameter right below it.
I feel like the UI could be adjusted in some way, maybe just adding a bit more info to the tooltip for transparency bounces?
