Oh man, I must have confused/mixed up the two... I'm sorry, this was my mistake.
In 3.1 adding a property via Python (C.object["foo"] = "bar") doesn't show up in the GUI (in the Object Data Properties tab -> Custom Properties). They used to show up in 3.0.1 (but not in the Scripting tab). I consider these bugs/loss of original functionality. Is there a good reason why properties assigned via Python don't appear in the GUI anymore?
I added custom properties both by the New button in the Object Data Properties tab and by Blender python (C.object["foo"] = "bar"). Depending on the method and Blender version the properties didn't show in the GUI at all or only in the Layout tab but not in the Scripting tab. I added these properties to the default cube.

For me Blender still completely freezes and won't respond after trying to disable viewport denoising after the render kernels have started loading but haven't finished. This happens in automatic and optix modes.

The task took an unexpectedly long time to finish (over 5 minutes), after that things do work now. However it is not optimal that interrupting the task makes the program crash.

This still seems to be an issue, I exported a cloth simulation to Unity with the newest official version and it only appeared when all actions and nla-tracks were disabled.

I see what you mean. I'm using grease pencil for concepting, so I move around the scene a lot. The 3D occlusion also seems to have some bugs, strokes disappear and reappear a bit randomly when rotating around. But thanks for the reply!
Thanks! Wouldn't it be more intuitive to have that option as the default?
